Rice Krispies Bars: A Simple, Family-Friendly Treat but make it DAIRY FREE!
Today I wanted to provide a dairy free treat that was easy to put together and I think I nailed it & I hope you give it a try! Rice Krispies are tasty because of their unique crunch and flavor. The light, crispy texture provides a satisfying bite, especially when combined with chocolate, I found a tasty chocolate that is free from 14 common allergens. The “Enjoy Life” chocolate featured in this video is safe for those with dietary restrictions and delicious. I recommend using dark chocolate for a richer flavor, but semi-sweet chocolate works well too.
Ingredients
1/4 cup of coconut oil
1 tsp of pure vanilla
1/2 cup of peanut butter
10 oz marshmallows (mini or regular)
Pinch of salt
6 cups Rice Krispies cereal
1 1/2 cups of dairy free dark chocolate morsels (I use the brand “Enjoy Life”)
1/2 tbsp of coconut oil (to mix in the melted chocolate)
Cooking spray or parchment paper (for easy removal & to avoid sticky fingers)
Steps
Get Ready: Collect all ingredients and tools.
In a large saucepan over medium heat, melt the coconut oil. Once melted, stir in the vanilla extract and a pinch of salt until well combined. Add the peanut butter, mixing continuously until the mixture is smooth and creamy. Then, incorporate the marshmallows. Continue to stir gently until the marshmallows are completely melted and blended into the mixture, ensuring a uniform consistency.
Remove the saucepan from the heat and gently fold in the Rice Krispies cereal, ensuring every piece is coated in that sweet, gooey mixture.
Pour the mixture into the prepared pan. Use a spatula or oiled hands (coconut oil) to press the mixture evenly into the pan.
Using a microwave-safe bowl, melt the chocolate in 30-second increments in the microwave, stirring after each interval to ensure even melting. Then stir in the 1/2 tablespoon of coconut oil into the chocolate and stir until smooth. Lather it onto your rice Krispie bar and decorate with sprinkles. I love adding sprinkles, but you can also do chopped peanuts & more sea salt, those are delicious options as well.
Allow the bars to cool completely at room temperature before cutting them into squares.
Store at room temperature for 3 to 5 days- I bet they don’t make it that long!!
