Dairy-Free and Nut-Free Crumble Recipe
The response to the first episode of Friday Food For Thought was awesome. I am thrilled to have assisted friends and community members individually with their culinary challenges. Based on the feedback received, there was a strong interest in more dairy-free and nut-free recipes. Excited by this request, I dove into the kitchen to experiment. After several iterations of this crumble, I’ve perfected the recipe. Here it is!
Ingredients
For the fruit filling:
2 cups of frozen mixed berries
The juice of 1/2 of a limon
1 tablespoon of maple syrup
2 tsp of cornstarch
For the crumble:
1 cup of old fashion oats
3/4 cup of flour
1/4 tsp of baking soda
pinch of salt
1/4 cup of brown sugar
1/3 cup of coconut oil
1 tsp of pure vanilla extract
Steps
Prepare the Filling:
Preheat your oven to 375°.
Over low heat, combine the frozen berries, maple syrup, the limon juice, and cornstarch. Stir gently until the mixture is well combined, and the fruits begin to thaw. Increase the heat to medium, continuing to stir until the mixture reaches a thick fruit sauce consistency. At this stage, you can choose to mash your berries for a smoother texture, depending on your preference. Do not overcook.
Make the Crumble Topping:
In a mixing bowl, combine the rolled oats, flour, brown sugar, salt, and baking soda, stirring gently to ensure all dry ingredients are evenly mixed.
In a separate bowl, gently melt 1/3 cup of coconut oil in the microwave, using 30-second increments. Stir between each increment until fully melted and smooth. Add the vanilla extract.
Add the melted coconut oil and vanilla extract to the dry ingredients, stirring until the mixture is crumbly and fully combined, making sure the flavors are evenly mixed.
Assemble the Crumble:
Using a tart or a small baking dish, apply a thin layer of coconut oil evenly on the surface to prevent the crumble from sticking. Below, you'll find my preferred tools and ingredients for crafting this crumble.
Spread enough of the crumble to cover the bottom of your baking dish, ensuring you leave a portion of the crumble aside for topping later, so spread it lightly. This is your gentle reminder to select a smaller baking dish for optimal results.
Spread the fruit filling on top and spread the rest of the crumble over the fruit filling.
Bake:
Bake in the preheated oven for approximately 20-25 minutes, or until the topping is golden brown and the fruit is bubbly.
Serve:
Let cool for a few minutes before serving. This crumble is delightful on its own or served with a scoop of dairy-free ice cream.
Savor it as a nutritious dessert with your family. It's also wholesome enough to serve for breakfast or as a mid-day snack! Keep in the refrigerator for up to 5 days.
