Easy pasta diner
Easy does it. Fall is so busy, filled with practices, games, parent-teacher conferences, homework sessions, and the task of closing down the yard as we prepare for the fall celebrations that are just around the corner. When and how did we become so busy in our everyday lives? In an effort to follow Mother Nature’s lead and embrace a more intentional pace, I propose to you an easy one-pot pasta meal that you can customize according to your personal tastes and the resources you have available at home. I encourage you to take a moment to chop a vegetable into tiny little pieces and add it to your sauce, raising the nutritional value of your meal while also enhancing its flavor. I sincerely hope that this dish helps you save some valuable time and that you give yourself permission to slow your rhythm, allowing for those precious moments of connection with your loved ones at the dinner table.
Ingredients
1 box of pasta of your choice
1 jar of pasta sauce of your choice, I used Classico Tomato & Basil
1 hand full of fresh spinach chopped into small pieces
1 tsp of oregano
1 tsp of onion powder
Salt & pepper
1/2 cup of cheese of your choice; Colby, Cheddar, Pepper jack, American cheese are all great options
1/2 cup of heavy whipped cream
Steps
Boil the pasta according to the instructions on the package. Once cooked, drain the pasta and rinse it gently under cold water to stop the cooking process and cool it down.
Meanwhile, pour the contents of your chosen pasta jar into the same pan you previously used to boil the pasta.
Add in the chopped fresh spinach, spices, cheese & heavy whipped cream. Stir the mixture until you reach a velvety smooth consistency, making sure that all ingredients are well incorporated.
Finally, add the drained pasta to the pan and stir until everything is perfectly combined. Serve the dish hot, with a side salad for a complete meal.
you can keep this dish for 3 to 5 days in your refrigerator. You can freeze individual portions of this dish. If you choose to do so, I recommend that you add a tablespoon of sauce to each portion before sealing it up. This small step will help maintain the dish's flavor and moisture, ensuring that each serving remains enjoyable when you're ready to eat it later.
