Breakfast cookies

When my 3-year-old son stubbornly refused to eat for several mornings in a row, I realized I needed to try a different approach. So, I had the idea to make a small batch of healthy breakfast cookies with him, hoping to spark his interest in breakfast again. After all, cookies for breakfast? Who wouldn’t want that treat to start their day! Friends, I am happy to say that it worked and that everyone loved it!

Comes together in less than 5 minutes/bakes for 10 minutes and devoured in no time

Ingredients

  • 1/2 cup of quick oats

  • 1/2 cup of old fashion oats

  • 1/2 cup of flour

  • 1/2 tsp of cinnamon

  • 1/4 tsp of baking soda

  • 1/4 tsp of baking powder

  • A pinch of salt

  • 1/4 of cup of brown sugar

  • 1 egg

  • 1/4 cup of butter, room temp

  • 1/2 tsp of pure vanilla extract

  • 1/4 cup of semi-sweet chocolate chips & 6 pitted and chopped dates OR 1/4 cup of white chocolate chips & 1/4 cup of dried cranberries OR simply put 1/2 cup of dry raisin without any chocolate

Steps

  1. Preheat the oven at 375 degrees and line up a parchment paper on a cookie sheet

  2. Using a big bowl, incorporate the oats, flour, baking powder, baking soda, cinnamon & salt

  3. Cream the butter with the brown sugar until well combined and add the vanilla and egg

    Truth be told, my butter was cold. I know it is not ideal while baking but I melted my butter in the microwave in 10 seconds increments until it was soft but not a liquid. The trick when doing that is to cut your half-stick of butter in 4th (follow the lines on the stick). The butter melts much more consistently that way.

  4. Incorporate the cream mixture to the dry ingredients and combine

  5. Pour your choice of date & semi-sweet chocolate OR cranberries & white chocolate chips OR raisins and stir until well distributed

  6. Using a small cookie scoop, make 15 little cookies

  7. Bake for 9 to 12 minutes, keep an eye on them and remove when the bottom of the cookie is golden
