Energy Bites

These littles treats are a great way to fuel our bodies with essential nutrients. Bursting with flavor and packed with wholesome ingredients, they are always a great choice to feel energized and satisfied.
These babies are filled with protein, fiber, healthy fats and vitamins, making them a nutritious option. They are great for nursing mamas, lunch boxe snacks, breakfast on the run & evening sugar rush. If you have the time, double the recipe and keep them in the freezer to fill your souls whenever you need! When it is time for me to make this recipe, I head out to Aldi to get all of my nuts, dried fruits & seeds, Aldi prices are significantly lower than other stores.

  • This recipe yieds about 20-30 balls of energy. Think of your week ahead, separate & freeze to enjoy them on you busiest or longest days for a nourishing diet.

  • Make sure you clearly state that the energy balls contain seeds & nuts. Label the bag or container you will transport them in to prevent allergic reaction.

  • If you are financially capable of sharing, these power balls are a great way to spread love. They are the perfect bites to enjoy as a group with a glass of milk, coffee or tea. Deliver it to a nursing mother to ensure proper nutrition, to a sport’s team, to your bible study, to your kids watching TV, studying or needing to share something with you. We all need love & care. Wet ingredients 

  • 1 cup of peanut butter or nut butter of choice

  • 1/4 of maple syrup 

  • 1/4 cup of honey

  • 1 tsp of vanilla extract

Dry ingredients

  • 3 cups of whole nuts of choice. I like to do 1 cup of whole walnut, 1 cup of whole almond and 1 cup of whole pecans. If you have purchased those already chopped, measure 3/4 of a cup worth per nuts

  • 1 cup of oat

  • 1 cup of dry coconut flakes 

  • 2 Tbsp of sesame seeds (you can substitute with flax seeds or sunflower seeds)

  • 2 Tbsp of chia seeds (you can substitute with hemp seeds)

  • 1/2 cup of pumpkin seeds

  • 1 1/2 cup of dry fruits. I like to use a mix of cherries & cranberries but raisins and dries blueberries are great as well

  • 1/2 cup of small chocolate morsels of your choice, I like dark chocolate, but they are usually bigger, and I prefer them smaller in those balls

  • Pinch of salt 

  • Choose between 1tbsp of cinnamon OR 1tbsp of Pumpkin spice OR 1Tbsp of coco powder to make it the flavor of your choice!

Steps

  1. On the stove top, gently warm & mix together all of your wet ingredients. Stir until well combined and set aside to cool off.

  2. Using a blender, chopped finely all of your choice of nuts & oats then transfert to a bowl. It should almost have the consistency of flour, but not quite this thin.

  3. To your fine mix of nuts & oats, add the rest of your dry ingredients: Coconut flakes, seeds, dry fruits, chocolate morsels, salt & 1 CHOICE of spice, stir until well combined. You can also divide your mix in half and choose to make 2 different flavors of power balls. You would do so at this step.

  4. Once your mix of wet ingredients is cooled off, add it to your bowl and fold until well coated. Then put it inside the refrigerator for 30 minutes. Waiting for the wet ingredients to cool off is important to ensure the chocolate morsel do not melt.

  5. Once your mix has been refrigerated & you are ready, grab a spoon full & start rolling. Make balls the size of your choice. I like to make mine at 1cm diameter or so. You should have about 20 to 30 balls, depending on the size.

You can keep the Energy bites in your refrigerator 5 to 10 days. They are Freezer Friendly, make sure to label the bags & mark their allergens before gifting or storing them.
