Hummus & Veggie Wraps
Ingredients
1 bag of Tortilla wraps (10)
1 small container of roasted pine-nut or roasted red pepper hummus
Tajin
A bunch of Spinach
1 large cucumber
Tri-color bell pepper (3) use 3/4 of each pepper
1/2 of a small red cabbage
1 bag of shredded carrots or you can shave 2-3 carrots, see pictures bellow
Cilantro (you can always make some wraps without)

When you host a party & desire to make most of the food yourself, it is a great idea to find recipes that can be made and kept in the refrigerator a day ahead of the event. The veggie wraps are a great option to alleviate some of the stress during the big day.

Store in an airtight container and keep for 3 days in the refrigerator. The veggie wraps are a great, fast and healthy lunch options for your busy week.

Don’t like hummus? Don’t like cilantro or Tajin? Make it your way. Use a veggie dip and add all of your favorite vegetables. My cousin loves to make these with a thick ranch as opposed to hummus, without Tajin or cilantro. That’s also delicious!
Steps
Clean and chop all of your vegetables thinly. I like to shred my cabbage.
Open your tortilla, lather the hummus & sprinkle the Tajin.
Add your cilantro, spinach, shredded cabbage, cucumber, carrots & bell peppers.
Roll tight and cut in the middle with a sharp knife.
You are done! Start piling them up!
Refrigerate for up to 3 days in an air-tight container for best texture and taste. Do not freeze.
