Cheeseburger dip

Cheeseburger dip, perfect summertime treat!

20 minutes prep time/12 minutes cook time/6 to 8 servings

The #1 reason why I get invited to parties: my cheeseburger dip. This hot dip is incredibly easy to prepare, and the perfect shareable dish to bring to your Labor Day cookout, Step aside Buffalo Chicken Dip! This will be the new crowd favorite for any picnic, sports tailgate, or party with friends.

Ingredients

  • 1 to 2tbsp of olive oil

  • 1 yellow onion

  • 1/2 pound of ground beef (I use sirloin 90/10)

  • 7 slices of bacon

  • 1 tsp of the fallowing spices; onion powder, garlic powder, chili powder, paprika

  • 8oz of cream cheese, softened

  • 1 cup shredded cheddar cheese + 1/4 cup to sprinkle on the top

  • 1 tbsp of Worcestershire sauce

  • 1 can of Rotel diced tomatoes & green chilies 10oz JUICE REMOVED

  • Dill pickles cut in pieces sprinkled on top

Steps

  1. Set aside your cream cheese to soften. Preheat your oven at 350 F degrees. Choose a medium size cookie sheet & cover it with aluminum foil. Arrange 7 slices of bacon and bake it in the stove until brown and crisp. It should take about 15 minutes.

  2. While your bacon is sizzling in the oven, heat 1 to 2 tbsp of olive oil to a skillet &cook your onions until they are translucent, this step should take about 3 to 5 minutes. Incorporate your ground beef to the pan and cook with the onions until fully cook, it will take about 5 minutes.

  3. Transfer your ground beef & onion mixture to drain over the sink, DO NO RINCE. I always prefer to drain the fat of cooked ground beef; it makes the dish much more enjoyable to eat whiteout the oil running around. To do so, I simply poor my mixture in a colander and press with a wooden spoon until it has fully drained the extra fat. I sometimes dab the top with a paper towel to make sure most of it is gone.

  4. Check on your bacon. When it is fully cooked & crispy, using tongs, transfer it to a plate lined with paper towels. This way the extra grease will be absorbed, avoiding a soggy dip. Dab the top if needed & set aside to cool.

  5. Using a cutting board, chop your dill pickles in bite sizes. Set it aside until serving time. If your bacon is cool enough to the touch, bring it to the board and cut it in bite size chunks.

  6. Using a big mixing bowl, mix together your ground beef with the chunks of bacon, cream cheese, Worcestershire sauce, spices, salt and pepper, 1 cup of cheddar cheese and the entirety of the Rotel Diced tomatoed & chili can JUICE REMOVED. Then give it a good stir until it is all perfectly married.

  7. Sprinkle with the remaining 1/4 cup of cheese and insert in the oven. It will take approximately 15 minutes to form bubbles and fill your kitchen with delicious smells.

  8. After the cooking time is over, sprinkle with the dill pickles & serve with Ruffles potato chips. A true delight!

Don’t worry about whether or not you should keep the leftovers and how long for- There won’t be any! Enjoy.
