Chicken and noodles in broth is not only a comforting meal but also healthy. Chicken provides lean protein, which is important for muscle growth and repair. Ingredients

  • 2 tablespoons of butter

  • 2 pounds of chicken thighs (about 9 tights)

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 medium carrots, diced

  • 3 celery stalks, diced

  • 1/2 teaspoon dried thyme

  • 1 teaspoon of dried rosemary

  • 1/2 teaspoon of onion powder

  • 2 bay leaves

  • 1 teaspoon of Salt

  • Pepper to taste

  • 1/4 cup of chopped Fresh parsley, and more for garnish

  • 32oz of chicken broth Brand “Zoup Bone Broth”

  • 32 oz of water

  • 16 oz bag of egg noodles

  • Juice of half of a fresh lemon.

Steps

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the chicken thighs, allowing them to sear for about 5-7 minutes until they turn a golden brown. Flip the thighs and introduce diced onion, minced garlic, carrots, and celery into the pot. Season the mixture with dried thyme, onion powder, rosemary, bay leaf, salt, and pepper. Stir to ensure everything is well-combined.

  2. Pour in the Zoup Bone Broth, followed by filling the empty jar with water and adding it to the pot, ensuring all ingredients are submerged. Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Allow it to simmer for approximately 30-35 minutes, or until the chicken is thoroughly cooked and tender.

  3. Once the chicken is cooked, remove it from the pot and set it aside to cool slightly. Introduce the egg noodles into the boiling broth and cook them according to the package instructions until tender.

  4. While the noodles are cooking, shred the meat into bite-sized pieces for easier serving.

Combining and Serving

After the noodles have reached the desired tenderness, return the shredded chicken to the pot and incorporate it well. Taste and adjust the seasoning with additional salt and pepper if needed. Remember to remove and discard the bay leaf. For an added layer of flavor, squeeze in the juice of half a lemon just before serving.
